But first, a love letter to onions. Yesterday I packed up the last of last season’s onions to be sold and simultaneously found myself seeding the first onions of the new season. Onions are a constant companion on our farm. We sow thousands of tiny seeds in February and March, transplant the tender seedlings into the fields in April and nurture and watch them grow through midsummer. In late July we harvest the bulbs from the fields and let them dry in the bright August sunshine. Their skins become papery and for months we distribute onions to CSA members, wholesale accounts, the Farm Store and use them daily in our own kitchen. The sweet bulbs last us through the darkest days of winter, flavoring our soups and stir fries, making our eyes water with their pungent juices. How perfect then, that as I enjoy the final onions of last season, we seed the very first of this season. Tiny black seeds, each one a hope for a beautiful harvest to come.
